Lavash Wrap with Hummus and Honey-Roasted Turkey
To make
these Middle Eastern-influenced pinwheel sandwiches, seek out lavash, hummus,
and honey-roasted turkey breast meat from a well-stocked food store or
delicatessen. Allow three pinwheel slices per person, depending on how many
other dishes you are serving.
I lavash piece,
about 14 by 22 inches (35 by 55 cm)
¾ cup (6
oz/l85 g) hummus
¼ Ib
(125 g) thinly sliced, honey-roasted turkey breast
4-6 large
spinach leaves, stems removed
Place the
lavash on a work surface. Cover with a thin layer of hummus, spreading it all
the way to the edges. Cover the hummus evenly with the turkey slices. Place the
spinach leaves lengthwise down the center.
Starting with a
long side, tightly roll the lavash and filling so they are compact. Trim the
ends. Enclose in plastic wrap and refrigerate until set, about 30 minutes.
Cut the lavash
roll into slices I ½ inches (4 cm) thick. Arrange in a large
transportable container, cover, and keep chilled until ready to serve.
Serves four.
